Meringue And TastyKake Coconut Hippity Hops

Howdy, everyone! I hope you are having a beautiful day? Today I wanted to share with you another easy little treat that you can enjoy this Easter or any time of the year. I love my food to be bright and colorful, so I have taken a family favorite, TastyKake and elevated it just a bit to give you the perfect little treat. I am so pleased how these came out I wish you could see my smile and good is not the word for these. They are simply magical.

If you adore coconut, then you must check out Coconut Hippity Hops Kandy Kakes! By themselves they are perfect, but when you add Meringues and melt the little Kandy Kakes just a bit, you bring your treat to an entirely new level. So let me explain how I made these.

First, you will want to make your Meringues. I followed a recipe that I have had for a long time, and they always come out perfectly. One thing that I do a little different is that I don’t use cream of tartar. Instead, I use a dash of lemon juice. So let’s gather some things up for the Meringues first.

  • 3 large egg whites, at room temperature
  • 3/4 Cup of Sugar
  • ½ teaspoon vanilla extract
  • A dash of Lemon Juice

Firstly get your egg whites to room temperature. Do make sure that you only have the whites and once you have your three egg whites, it is time to start mixing. I use my Kenmore Elite mixer, but a hand mixer does just fine. Keep mixing until you start to see beautiful white peaks. Slowly start to add sugar once the peaks have started to form. Lastly, add your Vanilla. Continue to mix to make sure everything is well mixed.

I then separated the mix into two bowls to add a bit of color to the mix 🙂 You will then place your cookies on a cookie sheet with parchment paper. I used a piping bag and just eyeballed the size of the Coconut Hippity Hops Kandy Kakes so they would be roughly the same size.  For the pink cookies I used a little “kiss” like top, and for the purple which I used for the center, I made them flatter.

Put your cookies in the oven for 1 1/2 hours at 190 degrees. This made eight cookies, and I did have a little bit to spare.

Once your Meringues are done you can let them cool or dig right in. Take one package of  Coconut Hippity Hops Kandy Kakes (two cakes) and pop them in the microwave for about 10 seconds. This melts them just enough to form your new magical treat. Layer a Kandy Kake, Meringue, Kandy Kake and the last Meringue.

Since the Kandy Kakes are a bit melted, you can dig in with a fork! YUMMMMMMMMM!!!!

This was one of those recipes that I just was not sure how it was going to come out, but I must admit that it is delish! Not into baking? No worries the Coconut Hippity Hops Kandy Kakes are amazing in themselves. The flavor of the coconut is a beautiful reminder of spring is on its way.
