Edible Cookie Dough Gingerbread Latte Bites

So I have been on a roll with recipes as I am going to try to stick with what I know, food & tech. I mean, everyone loves food and everyone needs tech, or is it the other way around. Anywho! Today I wanted to share an easy recipe with you to make your own edible cookie dough gingerbread latte bites. Yeah, I know it is a mouthful. As most of you know I have fallen in love with the Califia Farms products and I wanted to share one more little recipe.

These edible cookie dough gingerbread latte bites (my goodness) they are so good that even my husband loved them and he is a picky ass man. He said “man, the flavor keeps coming and I don’t like gingerbread or pumpkin” (yup. I added a bit of pumpkin spice). You might look at this recipe and think “what is this girl thinking”? BUT. Don’t knock it till you try it and I know you’ll love it!

So as we all know eating raw cookie dough is a no, no, right? But we can work around this! WINNER!! This recipe does call for flour but if you simply put the flour into the microwave till an internal temp of 170 degrees, it is perfectly fine. I read it on the internet so it must be true!! ?

Ok. So this is what I did to make the cookie dough balls. First, you will mix all your ingredients which are listed below in a super handy printable recipe. Since we are not using eggs to hold everything together, I used the Gingersnap Latte With Almond Milk from Califia Farms. This worked perfectly because you don’t want to eat raw eggs! YUCK. I added the butter, brown sugar, sugar, and salt and mixed it together just a bit. Next, I added the Gingersnap Latte With Almond Milk.

I started with about a half of a cup of Gingersnap Latte With Almond Milk. I wanted to mixture a bit tacky.

Now for the chocolate. I also added a bit of semi-sweet chocolate to the mix. A dash of pumpkin spice and BAM!

I then put the mixture in the fridge for about twenty minutes just so that it was easier to work with. Next, and this will blow your mind I used S’mores cereal to hold everything together. YUP! Sounds crazy right, but trust me they taste good!! I simply used the Ninja to grind that cereal right up! I then put a dab of the cookie dough into the S’Mores cereal and rolled it up.

Lastly, I put the cookie dough balls back into the fridge to set up just a bit more. I added a bit of sprinkles and that was that. Time to chow down..gobble..gobble..Sure this might not be a healthy recipe you want to eat all the time but it’s the holiday’s right?!?!?
