Cauliflower Casserole
As the weather is changing here in the mountains of North Carolina, I wanted to share this amazing Cauliflower casserole recipe. This has to one of our families favorite recipes during the cold winter months.
Not only is the Cauliflower casserole super easy to make but it is hearty enough to fill you up. I actually don’t eat potatoes so substitute everything with Cauliflower.
If you don’t eat meat like myself, you can simply leave it out as I do when I am making this for myself. The bacon does give it an amazing flavor. It also could use Morning Star Veggie Bacon to get that amazing flavor.
How To Make Cauliflower Casserole
When I say this is easy I mean it is easy! The first thing you want to do is make sure that you have all the ingredients to do the dish.

Ingredients
- 1 head cauliflower
- 1 container Greek yogurt, around 4-4.5 oz
- 4 oz Cheddar cheese, grated
- 1 c sour cream
- 2 sprigs green onion, chopped
- Salt & Pepper, to taste
Once you have everything the first thing to do is to chop your Cauliflower into small pieces.
Next, in a medium pot, add cauliflowers pieces and enough water to submerge them completely. Bring to boil then simmer for 10 minutes. This will help on cutting your time down when baking.
Meanwhile, arrange the bacon strips on a baking pan lined with aluminum foil. Bake in the oven until they become crispy, approximately 10 to 15 minutes, then chop into pieces.
When cauliflower pieces are done cooking, drain and set aside a side for later use.
In a small mixing bowl, combine Greek yogurt, sour cream, and shredded cheddar cheese (save about 1 oz for later use), mix well until everything is incorporated.
In a casserole, toss cauliflower with yogurt mixture and chopped bacon. Add salt and pepper to taste.
Sprinkle the remaining shredded cheddar cheese on top of the cauliflower mixture.
Bake cauliflower in the oven until the cheese melted completely, about 10 to 15 minutes.
When the cauliflower casserole is done cooking, remove it from the oven, garnish with chopped green onion. Serve immediately. Your family can dig right in!
