Cuban Mojo Potatoes

  • 1 1/2 LBS Yukon Gold Potatoes (diced)
  • 1 tsp kosher salt
  • 1 lime (cut into 6 wedges)
  • 1/4 C olive oil
  • 1 Red Onion (thinly sliced)
  • 4 tbsp diced garlic
  • 3 Scallions (sliced)
  • 1 tbsp Red Pepper Flakes
  • 1/2 C Chopped cilantro


  1. Using a BBQ Grill, turn grill on and allow to heat up for 10 minutes
  2. Using a cookie sheet, cover the bottom with foil
  3. Place all ingredients into the center of the foil, except the cilantro
  4. Cover ingredients with the foil into a tight package
  5. Cover the ingredients with another layer of foil
  6. Place the potatoes over the hottest part of the grill
  7. Rotate the potatoes every 10 minutes for about 50-60 minutes
  8. Remove from grill, unwrap, top with cilantro and enjoy!
