Grilled Cuban Mojo Potatoes
Ello, folks! I hope that you all are having a wonderful week? Today I wanted to share an amazing Potato recipe, the Cuban Mojo Potatoes. Our family just loves to make potatoes in different ways like the smashed Ranch Potato recipe that I shared a little while back. You can see that recipe here.

Since I love cooking on the grill
With this recipe, you just need a few items to get cooking!

Ingredients for the Grilled Cuban Mojo Potatoes
- 1 1/2 LBS Yukon Gold Potatoes, diced
- 1 tsp kosher salt
- 1 lime, cut into 6 wedges
- 1/4 C olive oil
- 1 Red Onion, thinly sliced
- 4 tbsp diced garlic
- 3 Scallions, sliced
- 1 tbsp Red Pepper Flakes
- 1/2 C Chopped cilantro
Personally, for this recipe, I would suggest using a grill because it really brings out all the flavors in the dish. First, you will want to turn the grill on and allow to heat up for 10 minutes. First mix all of your ingredients but for the cilantro.

Using a cookie sheet, cover the bottom with foil. Place all ingredients into the center of the foil, except the cilantro.

Cover ingredients with the foil into a tight package. Cover the ingredients with another layer of foil. Place the potatoes over the hottest part of the grill. Remove from grill, unwrap, top with cilantro and enjoy!
