Easy Fourth Of July Meal Idea
Howdy everyone and I hope you are all geared up for the fourth of July. Today I wanted to do two things, first, share with you the cuties grill EVA (but still has enough room to put everything you need) and secondly share an easy to create Fourth Of July Meal Menu. If you want to get away from the chips and hotdogs this is a super easy menu plan for you to create for your family.
First off, a couple of weeks ago I received the Weber College Q Series Grills, which I must say that I fell in love with as soon as I saw it. This baby rocks!! It is perfect for large family meals or if it is just the two of you, so each situation it is perfect for. Even though it is small but mighty the one feature that I adore about this grill is the fact that it has a Porcelain-enameled, cast-iron cooking grate. Which makes this not only easy to cook with but to clean up as well. That is if you don’t “season” your grill.
Weber offers many different colleges to choose from and this particular grill, in case you have not figured it out already is the Michigan grill. It was super simple to put together and really all that needed to assembled was the lid, insert the grates, and place the drip pan at the bottom of the grill.
I decided to use this over the weekend of the Fourth since it is just going to be me and my father in law. We do have another grill that is charcoal, but honestly, when I just need to get the food done I much prefer a gas grill any day.
Easy Fourth Of July Menu
So if you are like me and really did not plan at all for the Fourth, this is perfect for you. You will just need a couple of items, and most likely you will have them in your pantry or freezer. Depending on how many people you are going to feed of course you will have to modify a bit, but this works for large or smaller parties.
What you need:
- Chicken Thighs
- Corn either on the cob or off (don’t want to find fresh? You can use can corn as well…shhh)
- One onion
- One Tomato (One tomato is enough for two people)
- BBQ Sauce (I use Sweet Baby Rays because it grills nicely)
- Parsley just to garnish and make things purdy (you worked hard on this meal! make sure they know it)
- Seasoning for chicken (I used McCormicks Steak, garlic powder, onion powder, and a little bit of Pepper)
I first started the Chicken Thighs these will take the longest out of everything so go ahead and put them on about 20 minutes before you are ready to entertain. On the Weber Q Series Grill, it took about twenty minutes on medium for the chicken to be done. Before you throw them on put on any seasoning that you would like to use. I listed the ones I used above. Please note that I used very little pepper. Not a big pepper fan.
While these are on the grill start to chop your tomatoes, there is no wrong way to do this. I just make them a bit bigger than bite size so that they grill nicely and don’t fall through the grates. Add a dash of salt and put these on the grill as soon as you are finished chopping them. Once you flip these over once (don’t flip till you have nice char marks, get your corn.
Using corn on the cob is best but in a jam, you can use even can corn for this. I simply made a little tray out of tin foil to hold the corn.
It is now time to remove your tomatoes. They should be nice and soft before removing them. Once removed just place on a plate. I serve these room temperature. You could add a bit of dressing or even vinegar to these.
Make sure to keep checking your chicken and turning them so that they get nice and toasty 🙂 Once they are done simply spoon on a bit of BBQ sauce and grill for just a bit longer. BAM!! You have a nice meal there!! Everything could not be simpler to make.
I do hope that you take a moment and check out the Weber Q 1200 University Series. I really enjoy using this grill because of the fact that it is large enough for everything I would need to cook but not overly large that it is just overwhelming.
