Skinnygirl Salad Dressing? I know some of you might be thinking I have gone totally bonkers! Well I haven’t, just yet. Over the past couple of weeks I have tried each and every one of these dressings. They all are perfectly flavored and add a wonderful flavor to your dish or salad. All of the dressings except the Raspberry Vinaigrette have 10 calories and zero fat. The Raspberry Vinaigrette has 5 calories and zero fat. Any of these would be perfect this summer on your fresh veggies from the farmers market. I really can’t say which is my favorite, because they are all so good and different from each other. There was nothing that I did not like about the Skinnygirl dressings.
Instead of making a salad for this posting which would make sense, I decided to think a bit outside the box. In the summer we eat salads, but at times you want that hamburger and a side dish, or the perfect piece of pink salmon. Yet, what to make as a side, is something that I am always toying with. My husband does not care what time of the year it is, he loves pasta! So I started to think. In the winter we always combine pasta, fresh broccoli, butter and Parmesan cheese. After I had tasted a couple of the dressings I thought one would be a perfect summer time vamp on the standard pasta dish, removing some of the calories. What I did was totally cut out the butter and cut the Parmesan cheese in half, it still has the pasta, but it is a much more sensible choice.
You can really use any pasta with this dish. Our family seems to prefer Campanelle pasta, which is cooked to Al Dente, in about 10 minutes. Right before your pasta is cooked how you enjoy it, add the broccoli and continue to cook. You can use fresh broccoli, which I prefer, but for some reason can never find it locally, so I used frozen (same on me). All I did was put the desired amount of broccoli in a container to thaw, then heated and cooked with the already boiling water with the pasta. If you’re like me, I don’t like to have a million pots all boiling on the stove in the summer time, our house gets so hot!
After everything is cooked just drain. I added a teaspoon of olive oil just so that the pasta did not stick and added salt. I then added the Parmesan cheese, really the amount is totally up to your taste, but I would suggest if you made the 2 cups pasta add about a half cup or less of Parmesan. Instead of drowning the pasta and broccoli in the dressing, I think that not only are you saving calories, but looks super cute when presented to the family or guests is to drizzle the dressing around the plate. This lets your family or guests choose the amount they would like on the dish and cutting again on the calories you’re adding.
This dish turned out amazing and was a hit with the family. Even my picky husband loved it! Now that is saying something. So as you can see, you really can use these dressings in many different ways than in a salad and completely change the flavor profile of the dish. If you’re trying to cut out on pasta this summer another great side item is to cut up veggies, such as cucumbers and let them marinate in your favorite Skinnygirl Salad Dressing, which I have marinating in the fridge right now for tomorrows dinner. Skinnygirl Salad Dressing with Pasta & Broccoli
One box of your favorite Pasta
Two Cups Broccoli
Parmesan Cheese to Taste (The less you use the less calories) 🙂
Combine all ingredients and drizzle with Olive oil (to prevent pasta sticking)
Drizzle Skinnygirl Balsamic Vinaigrette onto plate or if you prefer onto the pasta
