Howdy, everyone! I hope you are all having a beautiful day. Today for lunch I had the chance to try out a new product from Explore Cuisine, and I must say that I am impressed. The Edamame Spaghetti is the perfect addition to my menu for a couple of reasons, but the biggest reason for me is the plant based protein!
The Organic Edamame Spaghetti has over half of your daily protein and fiber in just one serving. HUGE bonus for me. Since I eat no meat at all finding sources of protein can sometimes really be a pain in the rear end, but this is perfect. Being able to enjoy spaghetti with the added benefits is wonderful. Another point that is a must to share is that unlike regular noodles it seems that it always takes them forever to cook, especially if I want something in the afternoon. I just don’t have the time to sit and wait for the noodles to be done. The Edamame Spaghetti takes literally about 5 min or less, took me exactly 4 minutes from boiling water to plate.

I decided, like always to keep my lunch super simple. My family has always enjoyed cottage cheese and noodles. I decided to try the edamame spaghetti using this easy recipe, and it worked perfectly. The texture of the noodles is different than a regular noodle which just adds so much texture the dish. Add the cottage cheese and BAM! Lunch in under 7 minutes. Super cool right?
I really think this is a great alternative to using your regular noodles with all kinds of dishes. It is easy to make in a jiffy and has a beautiful taste all by itself if you enjoy edamame. To Make Edamame Spaghetti & Cottage Cheese:
- One Box of Explore Cuisine Organic Edamame Spaghetti
- One tub of large curd cottage cheese
- Olive Oil
- Salt & Pepper for taste
Simply boil your water and add the Edamame Spaghetti. After you add the Edamame Spaghetti bring to a simmer for about 4-5 minutes. Drain the spaghetti and run cold water over the edamame spaghetti to give it a more al dente texture. Put the Edamame spaghetti back in the pot you use to for boiling. Add a dash of olive oil, or you could use just cooking oil. Stir gently with a fork. Add about a large spoonful of cottage cheese and stir in with a fork. I use in all two large spoons of cottage cheese, but you might want more depending on your taste. Add salt and pepper for flavor. Enjoy 🙂
